The fusion of Japanese and Chinese vegetables gives this dish a distinct zest. The crunch from the purple cabbage, ohba leaf (Japanese Basil), enoki mushroom, daikon cress, white radish cucumber is enhanced by the bite from the ginger and the picked shallots.
