What you can expect from the new Japanese restaurant Ki-sho at Scotts Road

Chef Kazuhiro Hamamoto shares his exclusive insights on the restaurant.

Ki-sho, a two-storey Zen escapade showcasing an exquisite repertoire of Japan’s finest selection of Kyoto cuisine, recently opened in Singapore. According to a report, 50 labels of both traditional and seasonal sake will be available at the restaurant.

Singapore Business Review interviewed Chef Kazuhiro Hamamoto, Chef de Cuisine at Ki-sho, to learn more about the new restaurant at Scotts Road.

SBR: What motivated you to open this restaurant in Singapore?
Consumers in Singapore are matured and dynamic in taste profile equipped with good knowledge in food and beverage, therefore we believe the consumer group and the type of experience that we bring them would marry well.

Simplicity, less is more for both culinary and ambience is the total dining experience that we bring to our guests which blends well with the nature of the building structure of Scotts 29 situated at most busy vibrant district of Singapore - Orchard area and yet could enjoy the privacy and calm.

SBR: What can Singaporeans expect from your restaurant that they can't find anywhere else?
Ki-sho, we focus on Chef Hamamoto’s unique interpretation of Japanese cuisine with a strong reflection of his personality, yet staying true to the essence of Kyoto cuisine.

SBR: How does the interior of the restaurant complement with your menu? What do you hope to achieve with the atmosphere inside the restaurant?
The interior of Ki-sho is personally designed and crafted to reflect the garden Zen and the simplicity of architecture during the Meiji era. Every intricate detail is replicated by a team of Japanese artisans commissioned, and the materials used are all brought in from Japan.

This is in tandem with the culinary experience that we brought from Kyoto, which was once the capital for Japan back in those days, Meiji era.

From the ambience to the delicate presentation and quality of our food, Ki-sho provides diners a memorable dining experience.
