Get a taste of European share plate menu with a whimsical Bohemian vibe at Spathe Public House

Spathe Public House, located at Mohamed Sultan Road, is a restaurant-café which dishes up a trend-setting European ‘share plate’ menu to offer guests a chance to experience multiple flavours throughout the meal.

Singapore Business Review interviewed Mr. Christopher Lim, the Director of Spathe Public House, to learn more about the restaurant.

SBR: What motivated you to open this restaurant in Singapore?
I came to realise that people's all-time favourite food haunts are not necessarily the most avant-garde or trendy places, but rather, those that had a friendly, relaxed atmosphere and great comfort food. When I looked around Mohamed Sultan, I couldn't readily identify that quintessential 'neighbourhood joint', which makes this area the perfect fit for Spathe to open.

SBR: What can Singaporeans expect from your restaurant that they can't find anywhere else?
Spathe Public House believes that good food is meant for sharing, and we are bringing the concept of 'share plates' to a whole new level with our Mammoth Signatures which are excellent for groups of four to six people.

These include the Mohamed Sultan Meter Dog - which puts together our made-from-scratch metre-long baguette with a veal and chicken curry wurst that's customised to our recipe; the refreshing and fruity Sous Vide Spanish Octopus Salad with garlic soil, honey, and wholegrain mustard vinaigrette; and the rich and buttery Confit Duck Puff that's magnificent with a big slab of foie gras to amp up the indulgence.

We have Social Pitchers - tall jugs of jugs of cocktails such as a summery The Garden Pimms and our very own Spathe Special which is an addictive concoction of chocolate, espresso, Bailey’s Irish Cream, Frangelico, Crème de Cacao and Myer’s Dark Rum - that are fabulous complements to Chef Claudio's food.

ABF: How does the interior of the restaurant complement with your menu? What do you hope to achieve with the atmosphere inside the restaurant?
The cuisine is modern European and we wanted an atmosphere that's very casual and convivial for our guests to just hang loose over good food and drinks. I'm from New York and I've always loved the laid-back quirky vibe of Brooklyn's neighbourhood joints, so that influenced my interior design ideas for Spathe.

Keeping in mind that the name Spathe has its roots in botany, we have incorporated garden-inspired touches into our indie chic concept, such as the gorgeous graffiti of a hummingbird which was done by an up-and-coming local artist.

SBR: What can you tell us about this restaurant that is exclusively for SBR's editorial coverage?
Spathe has an excellent weekend brunch which is just ideal for busy professionals to unwind with hearty nosh such as our Spathe Slam ($24) where garlic-and-thyme pork sausage, crispy bacon, sautéed mushrooms, grilled honey tomatoes, eggs any style, and toasted bread are piled on for some substantial refueling. We've also a good range of international artisan beers all beer enthusiasts out there - even better, our monthly Bucket of 5 promotion is a real steal at $60 for five bottles of unique craft beers.
